I love cakes very much, especially Carrot walnut cake is my all time favourite! There is one coffee shop which is near by our place where they serve the best carrot cake, i totally love the texture and taste. This carrot cake is really dark brown in colour its because of the sugar i added, in this carrot cake i added muscavado sugar which is unrefined brown sugar which has the strong content of molases. It has the less sugar sweetness, infact i added addition 1/2 cup of sugar to achieve the sweetness. so when your trying this recipe, feel free to give a taste test before you bake. This recipe no fuss and quite easy one! So if you find your cake batter is less in sugar content, add sugar, add walnuts… give a taste test:) come on!! again add some sugar, walnuts when you find its perfect!! JUST BAKE THE GOODIES! here i really wanted to mention the importance of cinnamon powder and nutmeg powder. i would say these two are the must ingredients in the carrot cake, because its gives a Excellent flavour to this cake. Ingredients

  • All purpose flour/maida- 3/4th cup
  • Muscavado sugar- 3/4th cup
  • Eggs- 3
  • Cinnamon powder- 1.5 tsp
  • Nutmeg powder- 1.5 tsp
  • Baking powder- 1 tsp
  • Baking soda- 1 tsp
  • Carrot- 1 cup
  • Walnuts- 1 cup
  • Vegetable oil- 1/2 cup

Combine all the mixture. keep this dry ingredients aside.

In a mixing bowl, add in oil. i used vegetable oil

Break 3 eggs and drop in

Give a good mix to them so that the oil and eggs are mixed well.
